My first smoke of pork butt and when done I could no longer see the white 1 and 2 on my probes. They “absorbed” the smoke. Tried rubbing off, washing with dish soap and a soft scrubber. Nothing works

Perhaps you could soak it in white vinegar for several hours, then wipe it clean with coarse paper.
Alternatively, you could scrape it clean directly with a small knife.
