The oven reaches temp and when the temperature drops the display keeps the highest temperature that it reached and doesn’t turn the burner back on. Also the heat on light starts flashing power on and off to the spark module and fan until it coasts up to the set temperature and then shuts off. How can I make it maintain the set temperature?

Is there air circulation inside the oven?
If the temperature drops but the ITC-106’s reading does not change, please check and adjust the position of the probe to find the best position for reading the temperature. If the temperature is incorrect, it may affect the temperature control.
Maybe you could try the self-tuning mode?
SV= target temperature
CtrL= AT (self-tuning)
Run= dm (manual inhibit)
Others are factory default values
Can it meet your needs?
