Why is there two different models, what one is better?
Are there any real differences except the 200w doesn’t get as hot?

The ISV-100W temperature control range is 77°F to 210°F (25ºC to 99ºC).
The ISV-200W temperature control range is 32°F to 194°F (0°C to 90°C), and it has added dry burn protection.
Other functions are basically the same.
